Ingredients

For the Brownies
  • 1/2 cup gluten-free all-purpose flour (ensure low FODMAP)
  • 1/3 cup unsweetened cocoa powder
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup lactose-free butter (melted) or coconut oil
  • 1/4 cup lactose-free milk (or almond milk)
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1 teaspoon pure vanilla extract
For the Peanut Butter Swirl
  • 1/4 cup natural peanut butter (ensure no added high FODMAP ingredients like inulin or honey)
  • 1 tablespoon powdered sugar
  • 1–2 teaspoons lactose-free milk (to thin, if needed)

Instructions

  1. Preheat the Oven:
Preheat your oven to 350°F (175°C) and lightly grease or line a mini muffin tin with paper liners.
  2. Mix the Dry Ingredients:
In a medium bowl, whisk together the gluten-free flour, cocoa powder, baking powder, and salt. Set aside.
  3. Prepare the Wet Ingredients:
In a large bowl, whisk together the melted butter, lactose-free milk, eggs, granulated sugar, brown sugar, and vanilla extract until smooth.
  4. Combine the Mixtures:
Gradually fold the dry ingredients into the wet ingredients until just combined. Be careful not to overmix.
  5. Prepare the Peanut Butter Swirl:
In a small bowl, mix the peanut butter, powdered sugar, and lactose-free milk until smooth and slightly runny. Add more milk, if needed, to achieve a swirlable consistency.
  6. Fill the Muffin Cups:
Divide the brownie batter evenly among the prepared muffin cups, filling each about 3/4 full. Drizzle a small amount of the peanut butter mixture on top of each cup. Use a toothpick or skewer to gently swirl the peanut butter into the brownie batter.
  7. Bake:
Bake in the preheated oven for 18-20 minutes, or until the brownie bites are set and a toothpick inserted into the center comes out with a few moist crumbs.
  8. Cool and Serve:
Allow the brownie bites to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
